January is universally acknowledged as the month of detox. Gyms burst at the seams with enthusiastic new joiners determined to stick to their new year’s resolution… this time. Community centres across the country swell with the weight of weight watchers. Just yesterday, in search of a healthy sushi lunch, I was turned away from Yo Sushi due to an inordinately long queue. Call it what you will. Detoxing. Dieting. Getting fit. Yes, everyone’s at it folks. And I’m afraid I’m including myself in that number. For me, however, it’s slightly more epic. You see, I have done absolutely no exercise in the nigh-on nine months since Finn was born. Combine this with the fact that I seem to have continued to eat as if I’m feeding two, you have one mighty miss feedetgastro. Something needs to be done. And fast.

Recently when I was semi-drunk (after drinking with my fellow Brighton foodies, Fran a.ka. Graphic Foodie and Beth a.k.a Dirty Kitchen Secrets) the urge to eat struck, which lead us to Bill’s for some late-night munchies. Despite my inebriated status I was lucid enough to order salad (massive props to me). That salad contained caramelised shallots and those caramelised shallots positively made sweet love to my mouth. I mean they really got down and dirty with my taste buds. So, ever since I started these here salad diaries (vol 1, 2, and 3) I just knew that I had to try to recreate those caramelised shallots for your dining pleasure. And my friends… I did it. The shallots in this salad are literally going to blow your mind.
As you saw with the meat salad, on day 3 of the salad diaries I went through real meat withdrawal. On day 5 it was the turn of the carbs. Attempting to go without pasta, bread or potato is actually a rather depressing undertaking, and as a person whose life revolves around the celebration and enjoyment of food, I’m really not one for denying myself of things. The secret (and it’s taken me many years to learn this) is moderation. So, I’m delighted to bring a little carb joy into this salad series. Afterall the whole point of these diaries is to display the wonderful variety that “salad” encompasses, and indeed every salad I’ve eaten (not all of which have been documented) has been both different and absolutely delicious.
About a year ago Jamie Oliver opened his shop-cum-cafe-cum-cookery-school, Recipease, in Brighton. The shop in the front sells Jme products and ingredients, bakery goods, wines and takeaway meals that you can cook yourself at home. Originally you could also pop in and make more-or-less the same meals yourself using ingredients and recipes laid out at little cooking stations, but I guess that wasn’t really very successful because about 6 months ago they replaced the cooking stations with tables and started serving breakfast and lunch instead. I liked the idea of the little cooking stations, but I have to admit that I never ever went and cooked something so there’s no surprises that they packed that in.
The main attraction of Recipease (in my humble opinion) is the cooking classes that they offer on a range of skills, from tutorials in specific dishes through to how to cook the perfect steak right through to more advanced skills such as filleting fish or deboning chicken. Like a roving reporter who diligently covers all angles and gets all facts before running her story, I thought I ought to dabble in both food and classes before reporting back to you. Here is the low-down on breakfast and the “easy to learn” lessons.
Now the winter has well and truly set in, I am really craving some hearty winter warmers and there is nothing so warming as a good ol’ pie, with pastry, served with buttery peas! It’s such a delight to set one down on the table and see the glee in your fellow diners’ eyes!
My sister and I made this fish pie following Nigel Slater’s recipe last week. It was the first time I’d cooked something out of Slater’s Real Cooking book. It was a raging success – even my husband who ordinarily doesn’t like fish much ate it all up! And look how pretty!
