I think by now my regular readers will have gathered that I’m a complete and utter Italiaphile. I love the country, the people (my grandma being one of them), and most of all the food. Despite it’s no doubt devastating effect on my (ever-growing) waistline, I have pasta two or three times a week and, as with most people I’m sure, I have my favourites that never fail to delight and satisfy in equal measure. Most are ready within 20 minutes – surely one of the major perks of pasta – and all are delicious.

If I was an organised type of a person I might have posted this recipe prior to last Tuesday so you could actually enjoy it on that long-looked-for annual event, Pancake Tuesday. Well, if I was an organised type of a person I might have even made this on Pancake day itself. But if you haven’t realised by now, I am definitely not an organised type of a person even at the best of times. It turns out that at 8 and 1/2 months pregnant I am a dishevelled and discombobulated mess. As such I didn’t get myself together to make these beauties on Tuesday last (I think I was probably napping at the time), so we ended up having a Pancake Wednesday instead. But, you know what? Pancakes are damn good on any day, so I give you leave to make these on any which day you like. The ricotta along with a hint of lemon zest adds a delicious twist to the American style batter, whilst the smatter of raspberries and very British lemon curd make for the perfect combination.
I know that in many of my posts I have referred to my childhood as an inspiration for the idea or recipe (like when I made chutney or in reference to my mamma’s lasagne), but food to me is all about nostalgia and I personally have been so influenced by my childhood experiences of food. Most of my strongest food memories have involved seafood. One of the very earliest memories I have is winkling on the Dorset coast. My entire family armed with buckets trawling the rock pools for periwinkles, before boiling them up and using a pin to tease the little mantles out and dipping them in vinegar.
I don’t know about you but most of the post that comes through my door is best ignored. Sven is constantly berating me for picking up the post and then leaving it unopened on the dining room table. I just can’t be bothered. A bunch of bills and junk? Not interested thanks (I’m a spoilt brat, aren’t I?). But every now and again, something thuds on to our door mat that does get my attention… like, for example, Jamie Oliver’s forthcoming book: Jamie Does… which dropped through my letterbox last week.
You may remember that I recently made my own chicken stock for the first time. Ever since then the resulting stock has been sitting in my freezer waiting to be utilized. I, the other hand, have been thinking carefully about what I could make; something that would really showcase my first homemade stock. Finally last night I made the absolute perfect dish with it: mushroom risotto.
Once upon a time there lived a girl who went on and on about food and cooking all day long. Her friends had long since stopped listening and merely smiled sweetly, nodding along trying to look interested while privately slinking away in their minds to somewhere a little less monotonous. The girl was perfectly content boring her friends with her favourite subject until one day one very clever friend piped up and said, “why don’t you start a food blog?” The girl went home and started one that very night! That girl was of course me!
In order to thank Lottie for her inspirational idea (although now I just bore my friends with my blog as well as food and cooking) I wanted to invite her around to feast it up. To complete the party we also invited her boyfriend Chris and our other friend Ruth (all of whom I work with!). Now, as I’ve admitted before I am a complete Italiaphile and having recently bought, what is to me, the ultimate Italian cookbook, The River Cafe Classic Italian Cookbook, I decided I would prepare an Italian banquet (well perhaps not a banquet, but a good old feed at least).
